Whole Wheat and Honey Pizza Dough
1 package active dry yeast
1 cup warm water
2 cups whole wheat flour
1/4 cup wheat germ
1 tsp. salt
1 Tbsp. honey
1.Preheat oven to 350 degrees
2.In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
3.In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture. Stir well to combine. Cover and set in a warm place to rise for a few minutes.
4.Roll dough on a floured pizza pan and poke a few holes in it with a fork.
5.Bake in preheated oven for 5 to 10 minutes, or until desired crispness is achieved.
6.Top with your favorite toppings and bake till hot through!
I decided to try a new pizza dough recipe because I was burnt out on the one that I always use. I really liked this new recipe. It baked up crispy on the bottom, but was still soft and chewy. Of course if you know me in real life you already know that I have a "thing" for fresh-ground flour, but I'm sure that if you used whole wheat from the grocery it would still be yummy. I only baked the crust 8 minutes..next time I might even try a little longer for an extra crispy crust. This recipe was fast and easy. I will definitely use this again and it may possibly be my new "pizza crust that I always make"!

Sounds yummy! I have never made homemade pizza crust. I picked up a few whole wheat crusts at Trader Joe's the other day for a quick dinner. I wonder if you can freeze this recipe before you let it rise? Where do you get your wheat berries from? What kind of grinder do you use?
ReplyDeleteI don't know about freezing it before you let it rise...but I'm sure you could freeze it after it's prebaked. I've done that lots of times with my other recipe. I get my wheat berries from the bulk food store and I use a NutriMill grinder.
ReplyDeleteHi Mrs. K! (I miss your blog!) I have a grinder and a bunch of wheat berries sooooo....you could come see me and we could grind wheat! I'm with R, there is nothing like FRESH ground flour.
ReplyDeleteRachel, that is a good idea to freeze it after pre-baking. Duh! I am always looking for quick meals and that would certainly speed things up!
