Today's Blessings

Praise God...
~ tomatoes beginning to ripen in the garden ~

~ 1 1/2 inches of rain in the guage this morning ~

~ piles of cucumbers ~

~ the anticipation of fresh peaches soon delivered ~

~ memories of a fun weekend spent out of state with family ~

~ 2 treasures found in the chicken house ~

~ and the thumpa-thumpa-swish-swish sound of baby heartbeat ~

...from whom ALL blessings flow!

Birthday Parade

All of our children's birthdays fall from the middle of January to the first part of March~  It's one big party bash for a few weeks around here!
 
 No picture of the Lego cake allowed.  It was quite disastrous, looking a lot more like some cheap off brand of building blocks rather than the much-loved Lego.  {What 7 year old boy doesn't like Legos?}
And my attempt at a lower sugar cake for the family members that prefer not to eat too much sugar was pretty much a bust too.  Chalk it up to experience~A birthday cake is just better if it's unhealthy!
He liked the lamb, and managed to destroy most of its face.  {note~it's not a great idea to let a one year old cram his mouth FULL of cake.  yikes!}
And this one tells a story.  He is quite pleased to be four, although he keeps asking when he'll be five??!  We sang to him when we were in Florida.  He didn't have a cake or candle yet, but we sang anyway.  He sang along through the whole song, then smiled and leaned over and blew out his pretend candle, and then leaned his head back and let out an adorable giggle!   
And my oldest.  Ten Years Old.  TEN! 
I could say that "time flies when you're having fun" but that's an overused cliche.  It is true that time flies, though.  And she's growing up.  Fast!

A Meal Fit For a 'Queen'

My two oldest children fixed lunch for me the other day...
~tomato and mayo sandwich~
~cucumbers and carrots~
~apple slices w/peanut butter~
It was such a blessing...I was holding my feverish baby...he didn't want to be put down...they kept saying "Don't look, it's a surprise!"...it was enough food to share, they each had a full plate too...what a delicious lunch :)

Applesauce

Thanks to my mother for offering her house and help..to my sister for her willingness to endure a day of my son picking on her son...to my in-laws for generously sharing their apples...and most of all to God for growing the fruit..I am so blessed!

We stopped counting somewhere around 40 quart. Not sure how many apples we started with and not sure how much sauce we each ended up with...but I AM SURE that we have enough applesauce in the freezer to last through the winter.

All Things Strawberry

I'm so grateful today that my aunt went away for a long weekend and left her berry patch to me ~

~~ Brings back many memories~~
~we had a strawberry stand at the end of our lane, I think I started picking at about eight years old~
~many hours in the field, sometimes chatting more than picking (sorry, Lisa!), eating a few berries along the way... don't think I ever intentionally picked berries with white tips because I knew that Ivan would NOT be impressed~
~one year it rained every morning for 2 weeks right in the middle of berry season..the lesson my mom taught me that year was that if you say you're going to do a job, you do it. Even if you have to wear trash bags to keep dry~
~the excited feeling of being promoted to "working in the stand" instead of having to pick~
~itchy arms~
~early glow, red chief, sparkle...the varieties are still floating around in my head!~
~the race on a really good picking day to see if anyone could actually pick 100 quart. I think I did it once~

I tried a new jam recipe...I did this one last year except I used 1 c. white sugar. In my quest to reduce sugar intake, I decided to try sucanat. It worked and tastes just as delicious!
Layer in food processor:
2 1/2 c. sliced berries
1/4 c. sucanat
1 1/2 Tbsp instant clear jel
Repeat
Let sit a few minutes for the sucanat to start dissolving...then pulse until it's mixed and it is the consistency that you like. This tastes like pureed fresh strawberries...yyyuuummm!
Put in containers and freeze.
This won't keep as long in the fridge as sure-jell recipes...probably because it doesn't have whatever is in sure-jell to preserve it. But it's less sugar and that's a good thing in my book!

Sweet Spring Treats

I was having one of "those" mornings. The mommy burn-out kind.
  • the house looked overwhelmingly dirty and messy
  • laundry pile was daunting and never ending {is there any other kind of laundry pile?}
  • learning was minimal
  • Satan was telling me that I could never keep up

So, school books got put away because I need an attitude adjustment. Soon I heard a tap-tap on the back door. It was a dear friend with a sweet treat and an "I understand you've been having some interesting times" {She's been in the new-baby-now-mom-to-four category recently too} What a blessing her smiling face was today!

And these are the flowers my children brought in from outside......ever loving and forgiving children!
And I had a chat on the phone with another friend...she reminded me to make sure I was spending time with God and to spend some just-having-fun-time with my children. I think it's time to follow her advice, cause obviously doing this mom to four thing on my own strength isn't working too well!
I hope to post pics soon of one of our "interesting times"!

I'm Three!

Three years ago, we were blessed with our second son.......

He was a very easy, content baby. Set his own eating/sleeping schedule and just easily transitioned to sleeping all night. His first protest to life was when we decided it was time for him to stop sucking his thumb!

He's my dark brown eye, blond hair sweetie! At three, he's just beginning to talk alot...and I think his favorite thing to say is "Mommy, wook {look}!" He's full of energy and likes to sing...although he sings whole songs on tune, he only gets a few of the words. His latest songs are: Here I Am to Worship {I really don't know when/where he heard that one!} , Jingle Bells, and Happy Birthday.

Birthday Breakfast

So today is my birthday. {31st..to be exact!} My dear family cooked up a scheme to surprise me with breakfast. And I would have been still snoozing while they fixed it, but it happened to time to feed the baby. So I sat in the rocking chair and pretended that it was normal for my daughter and husband to be sneaking around in the kitchen at 6:30 in the morning!

Whole Wheat Buttermilk Pancakes - they sure know what kind of recipe this mama would pick!

Complete with a gift of bubble bath - they do know what I like !


This little plaque was tucked down in the gift...it has the verse John 16:24 which says:

Until now you have not asked for anything in my name. Ask and you will receive, and your joy will be complete.

I decided to put it on the little stand beside my bed. Because I'm sure that the time is quickly coming that when I hear a cry in the night I will groan {big-time} and wish I could stay snuggled in my warm covers. {speaking from experience..this isn't the first time I've had a newborn!} So I put it there to remind me to ask the Lord for strength, love and patience when I crawl out of bed, again, to care for our sweet baby.

So it has been a special start to my day. I have a family that loves me. Oh that I can show God's love to them as I care for their needs.

The Best Kind of Saturday

Start the day with grapefruit....they were surprisingly very sweet and good. I wondered how they'd taste. You just never know with grocery citrus. (helps that they were on sale :))

Followed with a plate of pancakes. Made with love by hubby dear! Somehow someone elses cooking just tastes so good!

This little guy ate more pancakes than the rest of us...he kept asking for more and more.

And then some time perusing the Christmas catalog (trying to teach the lesson of not coveting while looking at all the things little boys like!)

Color Me a Rainbow

I went to the garden today to see what all veggies I could use for Stir-fry for supper. I found a rainbow! (except we don't have any blue veggies!)

Onions Peas Tomatoes Broccoli Carrots Squash Beans Cabbage Peppers

All stir-fried together and put on top of hot rice.

Add a side of sliced tomatoes and you have a meal fit for a king! At least this household thinks so (with the exception of Little M...it took a little creative encouragement to get him to eat his veggies. The funny thing is that I bribed him with tomatoes. "If you don't eat your stir-fry, you can't have any tomatoes." You know. Not a typical bribing tactic for 2 yr. olds. But he's not typical. He adores fresh tomatoes.)

I decided to leave out the meat. It seems that we consume more than enough animal protein, so I thought I'd try it without and see what the hubby said. I don't think anyone even noticed. Yay for a cheaper, healthy, filling meal.

If you are really savvy with kitchen colors, you will be able to quickly tell we were married in the late 90's. Blue was the color of choice for kitchens. And yes, I still use the same dishes. Although some are starting to chip and crack. I do have some nice white dishes waiting to be unpackaged, but I guess I'm a little more sentimental than I normally admit.

Anyway...I think the blue (most of the time paired with yellow or green!) gave way after a few short years to red. And now I have NO IDEA what the hot color for kitchens is. I'm stuck in my well-loved blue kitchen. You know the kind that newly-marrieds cringe at? The ones that have old scratched Tupperware, various styles of drinking glasses, and cracked dishes? Yes, that's my kitchen. But my little kitchen has served my family well now for 12 years and I have been able to serve them many meals cooked with love in a sea of blue!

R&R and A Few Chigger Bites!

We were blessed to be able to spend a long weekend with my family. We stayed in some very nice, clean cabins (with A/C!)

Gathering around the map to try to help the late-er comers find their way. In the end, we weren't much help....this time the gps was better! The cabins are way back in and can be tricky to find!

Lots of canoe rides were taken on the private pond...thanks uncle and grandpa!

We had a fun weekend together...lots of eating, swimming and R&R. If you ever need a relaxing getaway...I can give you a phone# and directions. This is our 3rd time to visit and we hope to be able to go again sometime!
