Preserving the Bounty

We had some peppers still out in the garden. It's getting a little nippy out, so I decided to pick them and find a use for them. Thanks to my niece, Betsy (who knows WWWAAAYYY more about cooking and canning than any newlywed that I know) I found a way to preserve them WITHOUT having to get my canner back out. If you must know, I'm a little weary of canning!

I'll call them Betsy's Peppers:

Wash and slice peppers. Put in pan with 2 cups of water, 1 cup of vinegar, and one whole garlic clove. Bring to boil and boil for a couple of minutes. Fill jar, and put in refrigerator!

It's as easy as that!


I did one jar of jalapenos and one of banana peppers. They are chilling in the refrigerator...just waiting on our next pizza night!
