Saute the onions, peppers, and cabbage

I like to chop it coarsely because it does shrink down quite a bit...and I also add it a few minutes later than the recipe says to keep a little crispness.
Add in black beans, salsa, chili powder, garlic, cumin
Garnish with avocado and cheese
My picture is not nearly as appetizing as the one with the official recipe. Go check it out...it's the picture that convinced me to try the recipe in the first place!
Enjoy with great delight...even LittleM, our sometimes persnickety eater, likes them!
But if you're only 7 months old, you may get to eat something a little stranger yet...
